I was viewing your list of recommended books for inquiring Protestants. That is a good list. I especially like the way in which you separated them by category and stages.
I wanted to offer a recommendation if I may for Catholic devotion:
"The Spiritual Combat and Treatise on Peace of Soul" by Dom Lorenzo Scupoli.
Categorically, I believe it most likely belongs with other books on Catholic devotion. Unfortunately, that happens to be your last stage and category! This was one of the first books I read on my journey to Catholicism. It changed my life and my perspective after the first few pages. It also helped me immensely during the struggles I faced on the way to my conversion (understanding the spiritual warfare, discerning the attacks from the enemy, and the importance of seeking the peace of soul, which only God can and will give).
If you haven't read this book yet, I highly recommend it. I have purchase several copies for friends of mine, and their reaction has been the same. I can almost guarantee it will change your life.
